Pineapple Surprise Smoothie
Surprisingly good tasting smoothie ! Naturally sweet, perfect as part of breakfast, lunch or dinner. Packed full of vitamins and antioxidants, this will be sure to give you the boost you need to get through your day !

As we all know, people around the world are confined to their own homes. I'm finding it particularly difficult to continue with my weight loss and continue a healthy lifestyle. Especially whilst trying to exercise, eat 5 fruits and vegetables a day and work efficiently, all whilst remaining in the same space. I'm pretty sure i'm not the only one struggling to adhere to a new daily routine and it is why I decided to kick-start my day with a fruit and vegetable packed smoothie. For the past 2 weeks, I have been making them every morning for myself and my sister, who is an all-round vegetable hater. She only discovered yesterday the "surprise" ingredients of added carrot and celery to every single one of them and could not believe how I had got away with it ! Try this smoothie for yourself and I guarantee you will not be disappointed !
Ingredients
Makes 2 cups
- Half a cup full of crushed ice (or 1 full cup of ice cubes)
- Half a cup of pineapple juice
- 1 apple, peeled and cored
- 1 carrot, peeled and chopped in 3
- 1 stick of celery (roughly the same length as the carrot)
- Juice of half a lemon (or a whole small lemon)
- 1 sprig of rosemary (optional)
Method
- In a blender, add the pineapple juice, crushed ice, and apple and vegetables on top.
- Blitz on medium for a couple of minutes, then high for 3 minutes.
Assembling
- Pour your smoothie into both cups.
- Or pour it into a cocktail glass for a fancier looking smoothie.
- Add a sprig of rosemary and mix (optional)

Tips :
This recipe is pretty versatile, you can substitute all of the ingredients !
I find using your serving cups as a way of measuring the ingredients means there is no leftover waste.
